Foeniculum vulgare var. azoricum, commonly known as Florence Fennel, is a highly valued culinary vegetable grown for its crisp, swollen bulb and delicate, feathery foliage. Unlike herb fennel, this variety forms a tender, anise-flavoured bulb at the base, which is widely used in salads, roasting, and a variety of cooked dishes. The foliage can also be used as a garnish, offering a mild liquorice flavour. In Melbourne’s climate, Florence Fennel performs best in full sun with rich, well-drained soil and consistent moisture, particularly during bulb development. It is typically grown as a cool-season crop, thriving in autumn, winter, and early spring, as hot conditions can cause bolting.
