Laurus nobilis, commonly known as Bay Laurel, is an evergreen tree or large shrub prized for its aromatic, dark green leaves, which are commonly used in cooking. This Mediterranean native is highly adaptable and thrives in Melbourne's climate, tolerating a range of soil conditions as long as they are well-drained. It grows at a moderate pace and can be pruned into a formal hedge, topiary, or even trained as a small tree. In spring, it produces small yellow-green flowers, followed by dark berries in autumn. Highly drought-tolerant once established, Bay Laurel is perfect for gardens, pots, and kitchen herb gardens.
