The Tahitian lime (Citrus Γ latifolia), also known as the Persian or Bearss lime, is a highly productive and virtually seedless lime variety, prized for its juicy, tangy flavour. The medium-sized, deep green fruit ripens to a pale yellow when fully mature, though it is typically harvested when green. Unlike other lime varieties, Tahitian lime is less acidic and has a mild, slightly sweet taste, making it perfect for cooking, cocktails, and refreshing drinks. This evergreen tree has a dense, bushy habit and produces fragrant white flowers in spring and summer, followed by fruit throughout the year, with peak production in winter. It thrives in full sun and well-drained soil and is an excellent choice for home gardens, pots, or espalier training.
